Step 1 - Soak the Corn, husks and all, in cold water for 30 minutes.

Step 2 - While corn is soaking, prepare the chicken cutlets. Lightly coat the chicken with olive oil and sprinkle some southwestern spice rub on both sides. Rub the spices into the chicken. Refrigerate and allow the chicken to marinate while the corn is soaking.

Step 3 - After corn is done soaking, preheat the oven to 350 degrees Fahrenheit. Place corn directly on oven rack and roast for approximately 30 minutes or until the corn is relatively soft. Remove from oven and let the corn cool.

Step 4 - Preheat indoor or outdoor grill. Get the grill nice and hot. Grill chicken cutlets for about 2 minutes on each side, or until done. Remove from grill and allow to cool.

Step 5 - While the chicken and corn is cooling, add the remaining ingredients into a large bowl.

Step 6 - Remove corn from cob. Hold corn upright over a cutting board. Using a knife, gradually cut the corn from the cob in a downward motion. Be careful!

Step 7 - Slice the chicken into thin strips.

Step 8 - Add the corn and chicken to the bowl with the rest of the ingredients.

Step 9 - Add the ranch dressing and toss the salad. The amount of ranch dressing you add is honestly up to you. It depends on your personal preference. I like to add about 1/4 cup.

6.4 ounces tuna fish

1/2 bag of egg noodles

Tuna Salad Recipe

1 can cream of mushroom soup

1/2 can (use the can from the cream of mushroom soup) milk

Small bag of plain potato chips (optional)

Preheat oven to 350 degrees. (optional)

Bring 5 cups of water to a boil. Place noodles in the boiling water, sell out heat slightly, and cook until the noodles are tender. 1/4 cup plain, unsweetened low-fat yogurt
1/4 cup nonfat buttermilk
1 tbsp fat-free mayonnaise
1 tbsp chopped dill pickle
1 tbsp catsup
1 tsp chopped fresh parsley
1/8 tsp seasoned salt

In a small mixing bowl, combine yogurt, buttermilk, and mayonnaise, stirring until blended. Stir in remaining ingredients. Cover and refrigerate. Serve after completely chilled.

If you have children or grandchildren and want to serve this almond-orange salad, you'd best plan on some of the oranges disappearing before it's time to eat.

This salad is great with just about anything, but it is especially good with some good old comfort food like good old Southern fried chicken, biscuits, corn, mashed potatoes and gravy...my favorite!

Chicken Salad

Here's all you do:

6 Servings

1 head Romaine lettuce

1. Wash and break the lettuce into bite size pieces, and then spin them dry in a salad spinner. Place the lettuce in a salad bowl.

1 10.4 ounce can Mandarin orange sections, drained (and hidden from the children)

2. Mix the above orange slices in with the Romaine lettuce in the bowl.

Honey mustard dressing (see below)
Toasted sliced or slivered almonds

3. Place the lettuce and Mandarin orange mixture on private serving plates and pour on the honey mustard dressing (see below), then sprinkle with almonds to your liking. I like a lot of almonds, but just a few sprinkled on top looks better. It's not a bad idea to leave a small bowl of almonds on the table so diners can add what they want.

Honey Mustard Dressing

1 16 ounce bottle House Italian salad dressing (I use Kraft)

1/4 cup mustard

3/4 cup honey, or more to taste

1. Mix the above ingredients well with a wire whisk.

(which wasn't nearly as funny as saying that what her dad likes to read is mail!) Here's a few of my favorites and some tips to make them as simple as delicious.

Olive Salad

Prep Time: 30 minutes, Cook time: 0 minutes

A great side salad or overwhelming on a ham sandwich - turns it into a New Orleans style muffaletta sandwich. Add some provolone and mozzarella cheese and some genoa salami to it and you'll think you're in the big easy.

- equal amounts large pimento stuffed green olives and pitted large Greek olives - chop into small pieces (for the sake of recipe, assume you use soup can sized quantity of each)

- 1 stalk celery, sliced diagonally and chopped small

- ¼ cup olive oil

- ½ jar cocktail onions, drained and chopped

- 1 T. Capers

- 1 t. Minced garlic

- 1 t. Fresh ground pepper

- pepperocini to taste

Combine and refrigerate for at least 24 hours before using.

Tip: I have a gourmand grocery near me that has one of those dreadful olive bars. It has Pitted olives of dissimilar varieties as well as some combinations. I was able to use the pitted kalamatas and a green olive salad that contained the onion and celery. I then only had to add the capers, pepperocini, spices, and oil for that fab n'awlins taste.

My house used to make it with sour cream but then my good friend Gail suggested the mayo. It tastes just like my old recipe and the real advantage is that I always have mayo in my fridge. This is what summer tastes like to me!

2 English cucumbers - sliced (the long ones with minimal seeds)

¼ Vidalia or red onion - chopped fine

2 T. vinegar (I usually use cider because I always have it available)

2 T. Mayo (or more if you like it of course creamy)

salt and pepper to taste

Note: if you use quarterly cucumbers, they consist of a lot more water so take the extra time to drain them for better flavor. To drain, chop up the cucumbers, sprinkle with salt, and then put something heavy on top to squeeze the water out. Wait about 4 hours. I usually use a slightly smaller bowl with water in it as the heavy item.

Want a shortcut with just a slightly dissimilar flavor? Use ranch dressing with the 2 T. Of vinegar.

1/4 c. White wine vinegar

Cooking Instructions:

Cook macaroni agreeing to package directions; drain. Rinse with cold water and drain again. In large bowl couple macaroni, Provolone cheese, salami, zucchini, onion, peppers, olives, Parmesan cheese and parsley. Dressing: in screw top jar couple olive oil, vinegar, dry mustard, oregano, basil and garlic. Cover and shake well. Pour dressing over pasta mixture and toss lightly to coat. Cover and chill overnight, or at least 4 hours. To serve, add tomato wedges and toss lightly.

Curly Macaroni Salad

Ingredients:
1 pkg. Curly macaroni
1 onion, chopped
1 tomato, chopped
1 cucumber, chopped
1 c. Grated cheddar cheese
1 c. Chopped ham
4 tbsp. Mayonnaise

Cooking Instructions:

Cook macaroni and drain well. Add the rest of the ingredients.
Chill.

Shrimp Macaroni Salad

Ingredients:
2 c. Macaroni
1 c. Celery, chopped
1 small onion, chopped
1/4 green pepper, chopped
1 (7 oz.) can shrimp, drained
3-4 hard boiled eggs, chopped
1/2 tsp. Salt
1 c. Miracle Whip
3/4 c. French dressing

Cooking Instructions:

Cook macaroni and drain well. Mix Miracle Whip and French dressing together and pour over ingredients. Toss. Chill and serve.
