While it seems our summer is winding down, I know it's just hiding for a few days and will come back for one more big hot performance. So today, I am focusing on some summer side dishes that go great with those late summer and early fall picnics.

Red Tater Salad

Summer Salad Recipes

6 Cups of Small Red Potatoes, steamed, cut in half.

8-10 Slices of Lean Bacon, fried crisp, cut into ½ inch pieces

¾ Cup Celery, with leaves, cut into ¼ inch slices

1 Medium Red Onion, Chopped

½ Cup of Mayonnaise

½ Cup Ranch Dressing

Salt and Pepper to taste

Using a large bowl, pour in your mayonnaise, ranch dressing and mix. Add your warm but not hot potatoes, celery, onions and mix again. Taste the aggregate and add your salt and pepper at this time, then mix again. Add the bacon just before serving so it does not become soggy and mix once more.

The aggregate of the mayonnaise and ranch dressing adds someone else level of flavor to the salad with out having to add more ingredients.

Blt Pasta Salad

3 Cups Corkscrew Pasta, cooked

½ Cup Milk

8 Slices of Bacon, cut in 1 inch pieces, cooked crisp

1 Clove of Garlic, minced

½ Cup Mayonnaise

¼ Cup Sour Cream

Salt and Pepper

Add cooked pasta to a medium bowl, mix in the milk and set aside. The milk will keep the pasta from sticking together and becoming one large lump.

In a large bowl, whisk together the mayonnaise, sour cream and garlic. Add the pasta with milk and stir. Add ¾ cup of the tomatoes, the lettuce and bacon. Fold together until all are coated with dressing. Taste and add the salt and pepper if needed. Pour into your serving platter or bowl and sprinkle the rest of the tomatoes on top. Refrigerate, covered, until ready to serve.

So I wanted to put together my Slow Carb Diet Menu to give you some thoughts as to what you can eat. This is based a bit on the Tim Ferris - 4 Hour Body plan but I am also a bit more liberal with stuff like Bacon and am not as regimented with dairy food. (Organic Sour Cream & Organic Cheese).

Slow Carb Breakfast

For breakfast I like to keep this the simplest meal of the day. The less plan the better. I ordinarily wake up and drink a good sized bottle of iced water. This shocks the metabolism in to starting to move, quench's thirst and wakes you up.

I then corollary it up by a 80 - 90% Protein meal. This is the meal that is most leading when it comes to protein. I ordinarily end up having 2 Eggs, Bacon with some Pepper & Fresh Chives mixed in the eggs. I am trying to bring myself to eating spinach at 9am but it can be a struggle.

Slow Carb Lunch

I even had McDonalds the other day by taking off the buns of some burgers lol. Not ideal, but you have to work with what you can find sometimes.

Slow Carb Snacks Snacks

Here are just snacks I have when I get hungry. I do need to note that on this diet you do not assuredly get peckish as such. If I am getting hungry I will ordinarily add a 4 smaller Lunch/Dinner meal.

Easy and Fast Chicken Noodle Soup method

Here is a very easy and quick chicken noodle soup method for those who are time poor but still want something that tastes good. It should take you around 10-15 mins to get ready and will serve roughly 5-7 population depending how much you each want.

Personally I prefer richer cooked from scratch chicken noodle soup recipes to this one, but this method as I said is a quick, hence we have to use precooked chicken and packaged or pre made chicken stock, still it tastes good though.

Chicken Salad

Ingredients:

2- 2/1/2 Cups of cooked chicken pieces.

1350ml (45 fl oz) of chicken stock ( broth)

2 Medium sized celery stalks

3 medium carrots

1 medium to large onion

Noodles - preferably choose a short smallish egg noodle shape adequate to serve around 5-7 cups of soup

pinch of salt

pinch of pepper

Instructions:

You'll need precooked chicken to make this method fast, but you could cook your own from scratch, and for this chicken noodle soup method it literally doesn't matter how the chicken was cooked. You can sliced up your chicken into dinky bite sized pieces or pull it apart roughly if you prefer. Remember the movie Seems Like Old Times with Chevy Chase and Goldie Hawn? The Governor is invited over for his popular dinner, chicken pepperoni, made by the maid, Aurora. But Aurora has to have her feet scrapped and cannot be there to cook the meal. That's when the fun starts. After I saw the movie, I had to try the dish and over the years I have hopefully improved on the former method I found. See what you think of my chicken pepperoni.

Chicken Salad

Ingredients (6 servings):

3 tablespoons - extra virgin olive oil 1 - large onion, chopped 2 cloves - garlic, minced 1 28-ounce can - diced tomatoes (I like Hunt's brand) 1 6-ounce can - tomato paste (Hunt's brand preferably) 8 ounces - button mushrooms, sliced 2 tablespoons - fresh basil, chopped 9 ounce - pepperoni stick (remove cover around the pepperoni if it has one) cut into 1/4-inch slices and then quarter the slices 1/3 cup - all purpose flour 1 tablespoon - fresh oregano 1 teaspoon - salt 1 teaspoon - pepper 2 pounds - skinless boneless chicken breasts cut into 1/2-inch cubes 2 tablespoons - extra virgin olive oil 1/3 cup - white wine (e.g., chardonnay) 1 pound - pasta (I prefer rotini noodles for this dish)

Preparation:

Heat the 3 tablespoons of olive oil in a large skillet over medium heat. Add the onions and cook until soft and translucent, about 5 minutes. Add the garlic and cook for one minute. Add the tomatoes, tomato paste, mushrooms, and basil and simmer over low heat for about 5 to 10 minutes (mix well). Set aside.

Meanwhile, place the pepperoni in someone else smaller frying pan and cook over medium heat for about 10 minutes to cook the fat off. With a slotted spoon, remove the pepperoni and add it to the sauce. Discard the oil.

Add the flour to a small bowl along with the oregano, salt, and pepper and mix. Add the chicken to the flour aggregate to coat. Add any remaining flour aggregate directly to the sauce.

Heat the 2 tablespoons of olive oil in a large Dutch oven over high heat and brown the chicken, about 15 minutes. Add the white wine to the chicken and cook off the alcohol, about 2 minutes. Add the tomato sauce and pepperoni to the chicken and wine, cover and simmer on medium-low heat for 15 minutes. Stir periodically

Meanwhile, cook the pasta in salted boiling water for about 10 minutes.

Spoon the sauce over personel servings of the pasta. Enjoy!

These are the ingredients I used:
1/2 cup vegetable oil 1/4 cup chicken base 3 cups diced yellow onions 2 teaspoons ground cumin 2 teaspoons chili powder 2 teaspoons granulated garlic 1/2 teaspoon cayenne pepper 2 cups Masa Harina (Mexican flour) 4 quarts water (divided into 1 and 3) 2 cups crushed tomatoes 1/2 pound processed American cheese, cubed 3 pounds cooked chicken, pieced pico de gallo, mixed cheese shreds, and crunchy tortilla strips, to taste

All of these ingredients are fairly base and ready in any grocery store. If your store has a "Hispanic Foods" aisle, you will find Masa Harina there. Fresh pico is recommended over canned or jarred. Tortilla chips will work when home-fried strips are not practical.

To make your Chili's Chicken Enchilada Soup:
Combine oil, chicken base, onion, and spices in a large pot. Saute until onions are soft and clear, about 5 minutes. In a large mixing bowl, merge Masa Harina with 1 quart water. Stir until all lumps dissolve. Add to sauteed onions, bring to a boil. Once compound starts to bubble, continue cooking for 2-3 minutes, stirring constantly. Add remaining 3 quarts of water and crushed tomatoes. Let compound return to a boil, stirring occasionally. Add American cheese and chicken. Sacrifice heat and simmer to desired consistency. Serve in large bowls. Top with mixed cheese shreds, pico, and tortilla strips. Enjoy!

1/3 Cup of Freshly Chopped Basil
1 Clove of Garlic Minced
1 Teaspoon of Salt

Directions:

Step 1: Mix together everything, accept the chicken breasts, in a large bowl. Step 2: Add chicken to the bowl, cover with plastic wrap and marinate in the refrigerator for some hours. Step 3: Get you grill nice and hot and oil the grates to prevent the chicken from sticking. Step 4: Grill chicken about 4 minutes per side or until done.

4 Boneless Skinless Chicken Breasts

10 - 15 Kalamata Olives Pitted and Chopped
8 - 10 Sun Dried Tomatoes Cut Into Thin Strips
4 Tablespoons of Extra Virgin Olive Oil
2 Tablespoons of Freshly Chopped Basil
2 Tablespoons of Freshly Chopped Parsley Salt and Pepper to Taste

Directions:

Step 1: Preheat Oven to 450 Degrees F

Step 2: In a bowl, merge the olives, tomatoes, basil, parsley, olive oil, salt and pepper.

Step 3: Cut 8 Squares of Aluminum Foil (Cut them large, about 18 inches square)

Step 4: Grab 2 squares of foil and place one on top of the other.

Step 5: Grease the foil with some olive oil

Step 6: Place a chicken breast in the center of the foil and spoon some of the tomato and olive aggregate on top

Step 7: Loosely fold the foil over the chicken forming a tent and seal tightly

Step 8: Repeat this process for the remaining chicken breasts

Step 9 : Place the wrapped chicken breasts on a baking sheet and place in the pre-heated oven

Step 10: Bake for practically 20 minutes or until done. To check for doneness, cut a small slit in the foil to allow the steam to escape and then determined unfold the foil. Check for doneness with an instant read thermometer. The internal climatic characteristic should read 160 degrees F.

Step 11: Let the chicken breasts stand for about five minutes before serving.

I use Tupperware's Rock N Serve medium or large deep holder depending on how many potatoes I am using. Try to find a microwave safe holder that is deep if you don't have the Rock N Serve containers.

Summer Salad Recipes

Peel and cut your potatoes into quarters.

Place in your microwave safe container. You may need to add water. If you are using the Rock N Serve holder you don't need to add any water.

Microwave on high for one itsybitsy per potato. If you have 15 potatoes you would cook for 15 minutes. Stir every five minutes to avoid hot spots. This is for average size potatoes.

You can then use the cooked potatoes in your recipes. Here are a integrate of examples.

For mashed potatoes:

Heat butter and milk in a small microwaveable container. Pour into the holder your warm vegetables are in. Add seasonings to taste and serve.

For home fries:

Cut potatoes in bite size pieces rather than in quarters before cooking in the microwave. Saute chopped onions, green peppers, and paprika in a large frying pan. Add cooked potatoes. Raise the heat and fry to taste.

For potato salad:

Keep the potatoes in the holder after cooking and place in a cool sink or dish pan in ice water. This will help to cool the cooked potatoes quickly. Make your popular potato salad composition and add to the
potatoes once they are cooled. For example, I add Miracle Whip, chopped olives, and chopped boiled eggs because that is how my family likes their potato salad.

As you can probably see by now, you can use your own recipes once the potatoes are cooked. Cooking them in the microwave is just a faster and cooler way to cook the potatoes.

If you're finding for a good "homemade baked beans recipe" recipe - this is the place! everyone loves some good baked beans, but most recipes call for them to be in a crockpot. Mine doesn't, instead I use can beans and cook them on the stove top. It's true, you could just buy a fancy can of Bush's baked beans, but it's just not the same as production your own homemade baked beans and letting them simmer of the stove as the flavors meld together! These are equally as good in the summer with a Bbq as they are in the winter on a cold blistery day!

In the winter time you can cook this on the stove and let it simmer while production the main dish, but in the summer I like to just put the pot on the grill and let the beans simmer while I grill my meat. Now, if you want an excuse for a party, but don't fancy champ and colcannon - and I don't blame you if you don't - then here's a themed St Patricks Day Menu that you might like to try.

Menu Salads

The colours of the Irish flag are green, orange and white.

For starters, try a creamy basil tomato soup, garnish with a swirl of cream and chopped basil and there you have the starting of your theme - green, orange and white.

For main course, I would favour a poached salmon with watercress sauce, served with carrots, broccoli, cauliflower and new potatoes - that puts two orange, two green and two white items on your plate.

For dessert, try a mixed fruit salad - kiwi, mango, lychees, green grapes, orange segments and sliced pears - top it with whipped cream, chopped angelica and a shake of cinnamon or ginger - lots more green, orange and white.

Finish your St Patricks Day Menu with Irish Coffees - sweetened black coffee with a shot of Irish Whiskey and cream floating on top - delicious - and you might find you want more than one.

Continue your colour theme with a white tablecloth and green and orange candles and napkins.

White tableware would be nice - I all the time think food looks good served on white crockery.

To drink, you can have Guinness - which is very good for you, so they claim - Irish Whiskey is freely available, but of policy neither of these are convenient for serving with your poached salmon.

I've researched heavily for Irish wines - and they do exist, but you're unlikely to find any on normal sale.

Ireland doesn't have the climate to hold large industrial vineyards - those that exist are very small - 5 acres or less and all colse to Cork (well, if you're going to produce wine, you need cork).

One of the vineyards makes wines for its own cafeteria and the others just contribute local shops and restuarants.

The largest produces a mere 3000 bottles a year.

If you hunt though, you can find Irish population who have emigrated to wine producing countries and the vineyards will have Irish sounding names - the best I can do as a wine suggestion for a themed St Patricks Day Menu.

I like champagne with salmon - a nice, medium dry fizzy wine is great and it adds to the celebration to have champagne corks flying.

If you don't like fizz - then go for a medium dry white - Nierstein, Piesporter or similar.

Clementines are the small citrus in boxes or mesh bags that appear in markets during the winter months. This year's crop is tasty, juicy and plentiful (prices are low!).

They're great for snacking, sweetmeat or in fruit salads. Clementines also make a fabulous increasing to practically any green salad, or in hearty salads with whole grains and beans. I've included five of Diana's recipes below to get you started.

Simple Salad Recipes

In Canada and perhaps elsewhere clementines may be called mandarins. Technically clementines are a cross between mandarins (Citrus reticulata) and Seville oranges (Citrus auratium). The recipes can be made with any of the tangerine-sized citrus or with oranges sections cut into bite-size pieces.

To get ready clementines for salads, just peel and section. If they are large or you want more flavor from the juice in your salad, cut the peeled fruit in half cross-wise before you isolate the sections.

Look for boxes of small, firm fruit. I find that the smaller clementines often have the best flavor, although they may be more difficult to peel. If you get a box with poor flavor, look for an additional one "brand" (from the box labels) and try again. They come from Spain, Morocco, South America and varied other countries; I haven't found any trustworthy way to tell which will taste best. If you can find the ones from California (usually labelled "California Cuties", in mesh bags), they seem to be consistently good.

Orange or lemon peels can be grated ("zest") for flavoring, but Do Not try to use clementine peels this way -- they are very bitter.

2 cups cooked barley or other whole grain of your choice, chilled

1 16-ounce can black beans, drained and rinsed

1 green pepper, chopped

1 bunch green onions, chopped

12 clementines, peeled and sectioned

1/4 cup honey-mustard salad dressing

Butterhead or other lettuce leaves (optional)

Combine all ingredients except the lettuce and chill. Serve on a bed of lettuce leaves if desired.

1 large or 3 small fennel bulbs

10 clementines

1/4 cup lemon juice

2 tablespoons fennel seeds

1 teaspoon ground cumin

1 clove garlic, minced

pinch cayenne, or to taste

Freshly ground black pepper to taste

Trim the fennel bulbs, discarding the base and stems. Cut the bulb in quarters lengthwise and then slice crosswise into 1/4"slices.

Peel the clementines, cut them in half crosswise and isolate them into sections. Mix all but 1/2 cup of the clementine sections with the fennel in a serving bowl.

Crush the remaining 1/2 cup of the clementine sections with the back of a spoon. Add the lemon juice and seasonings. merge with the fennel and clementines and chill for at least 1 hour to blend the flavors.
