Here is a very easy and quick chicken noodle soup method for those who are time poor but still want something that tastes good. It should take you around 10-15 mins to get ready and will serve roughly 5-7 population depending how much you each want.

Personally I prefer richer cooked from scratch chicken noodle soup recipes to this one, but this method as I said is a quick, hence we have to use precooked chicken and packaged or pre made chicken stock, still it tastes good though.

Chicken Salad

Ingredients:

2- 2/1/2 Cups of cooked chicken pieces.

1350ml (45 fl oz) of chicken stock ( broth)

2 Medium sized celery stalks

3 medium carrots

1 medium to large onion

Noodles - preferably choose a short smallish egg noodle shape adequate to serve around 5-7 cups of soup

pinch of salt

pinch of pepper

Instructions:

You'll need precooked chicken to make this method fast, but you could cook your own from scratch, and for this chicken noodle soup method it literally doesn't matter how the chicken was cooked. You can sliced up your chicken into dinky bite sized pieces or pull it apart roughly if you prefer. Its all the time nice to use chicken breast when you are making chicken noodle soup, but again it's up to you.

Chop up your celery carrots and onions into small pieces.

In a large saucepan add your chicken stock ( broth) a pinch of salt and pepper as well your chopped up vegetables and your chicken pieces. Mine doesn't, instead I use can beans and cook them on the stove top. Drain each can of beans and pour into a sauce pan. Add all other ingredients and cook on medium high heat until it boils, then cover and sacrifice to low heat and simmer for one hour. If you're in a real hurry, you can cook on high for 10 minutes and serve (it just won't taste as good!).

In the winter time you can cook this on the stove and let it simmer while production the main dish, but in the summer I like to just put the pot on the grill and let the beans simmer while I grill my meat. In addition to the basic dough you will need:

1/4 cup unsweetened cocoa powder

3 large eggs

1 1/2 cups granulated sugar

3 cups flaked coconut

1/2 cup maraschino cherries, well drained and coarsely chopped

Line a 13"x9" baking pan with foil.

Stir cocoa powder into basic dough mixture. Press evenly into the prepared pan. Bake for 10-15 minutes or until the crust looks dry.

In a medium bowl whisk together eggs, sugar, almond extract and baking powder until well blended. Stir in coconut and cherries. Pour over the baked crust.

Bake for 30-35 minutes, until top just begins to brown and a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack. Lift it out on to a cutting board using the foil ends and cut into 1 1/2" squares. Squares can be stored in an airtight holder for up to 3 weeks.

Coconut Pineapple Cookies

(Makes about 36)

In addition to the basic dough you will need:

1 1/2 cups sweetened flaked coconut

1/3 cup pineapple preserves (use raspberry or apricot if you prefer)

Add 1 cup of the flaked coconut to the basic dough compound and mix well. Shape the dough into 1 1/2" balls and roll in the remaining coconut to coat them. Place the balls 1" apart on lightly greased cookie sheets. Make a deep indentation in the center of each cookie with your fingertip.

Bake for 12-15 minutes until the cookie is firm and the coconut is lightly toasted. When cooled, fill each hole in the center of the cookies with the preserves.

You can vary this basic dough to make a wide range of Christmas cookie recipes. Add other flavorings like maple, ginger or cinnamon. Add chopped dried fruits like apricots or dates. Or bake them plain in holiday shapes and decorate with colored icing.

During the fall season, we love to visit our local fruit orchard and pick our own apples so that we can make some homemade apple chutney.

We enjoy using this chutney as a sandwich spread or as an addition to our homemade chicken, turkey and tuna salads. If you are using it as a salad spread, cut your mayonnaise or salad dressing in half and replace the other half with the chutney.

Tuna Salad Recipe

This recipe requires the basic home canning equipment: half-pint or pint-sized mason jars, water bath canner, jar lifter, seals and rings, ladle and a funnel.

Apple Chutney Recipe

2 quarts apples

2 teaspoons lemon juice

2 lbs. Seedless raisins

4 cups brown sugar, firmly packed

1 medium onion, finely chopped

1 cup sweet red peppers, finely chopped

2 red peppers, finely chopped

1 clove of garlic, crushed

2 1/2 tablespoons mustard seed

2 tablespoons ginger

2 teaspoons ground allspice

1 teaspoon curry powder

2 teaspoons table salt

4 cups white vinegar

Apple Preparation: Wash, peel, core and chop your apples, sprinkle with 2 teaspoons of lemon juice to preclude darkening; set aside.

In a large stock pot, combine all of the above ingredients, one at a time and stirring in in the middle of each addition. Over medium heat, simmer the combination for 60 to 85 minutes or until the combination has thickened. Use a nonstick silicone spatula to stir the combination every 10 minutes.

Once combination is done cooking, ladle it into hot and clean mason jars, leaving a 1/2" head space. Use a soft cotton towel and wipe the rims clean before placing the seal and ring onto your jar.

Process jars in your water bath canner for 10 to 15 minutes or according to manufacturers instructions. Once they are done, thought about take off them from the water and let them cool in a non-drafty area of your kitchen. After 2 hours have passed, recheck your jars to make sure they have all sealed properly.

1 tablespoon garlic powder
1 tablespoon salt
2 teaspoons ground cumin
1 teaspoon cayenne pepper
1 teaspoon crushed red pepper flakes
1 teaspoon black pepper
1 teaspoon dried oregano

- 8 Ounces of Mixed Salad Greens - I like to use a mix of Baby Romaine, Radicchio and Tango. If you can't find fresh greens, I suggest buying a bag of Fresh Express brand mixed salad greens. I have sampled a handful of salad brands and Fresh Express is by far the best in my opinion. The vegetable are always fresh, crisp and delicious. Everything is pre-washed and there are no preservatives.

2 Ripe Avocados Cut Into Small Chunks - It is very important that you pick ripened avocados. When finding for ripe avocados, do not pick them based on color. The best way to conclude if they are ripe is by the squeeze test. Ripe avocados will have a firm flesh but will give slightly when squeezed. Unripened avocados are hard and will not give. You should be able to tell the difference. It may take a bit of practice though. If you are unsure, ask for help. A ripe avocado should slice like butter.

1 Large Green Bell Pepper Cut Into Squares
2 Ears of Roasted Corn (Instructions Below)
Half of a Red Onion Sliced
A healthy Bunch of Fresh Cilantro Chopped
1/2 Cup of Shredded Cheddar Cheese
Ranch Dressing

Directions

Step 1 - Soak the Corn, husks and all, in cold water for 30 minutes.

Step 2 - While corn is soaking, prepare the chicken cutlets. Lightly coat the chicken with olive oil and sprinkle some southwestern spice rub on both sides. Rub the spices into the chicken. Refrigerate and allow the chicken to marinate while the corn is soaking.

Step 3 - After corn is done soaking, preheat the oven to 350 degrees Fahrenheit. Place corn directly on oven rack and roast for approximately 30 minutes or until the corn is relatively soft. Remove from oven and let the corn cool.

Step 4 - Preheat indoor or outdoor grill. Get the grill nice and hot. Grill chicken cutlets for about 2 minutes on each side, or until done. Remove from grill and allow to cool.

Step 5 - While the chicken and corn is cooling, add the remaining ingredients into a large bowl.

Step 6 - Remove corn from cob. Hold corn upright over a cutting board. Using a knife, gradually cut the corn from the cob in a downward motion. Be careful!

Step 7 - Slice the chicken into thin strips.

Step 8 - Add the corn and chicken to the bowl with the rest of the ingredients.

Step 9 - Add the ranch dressing and toss the salad. The amount of ranch dressing you add is honestly up to you. It depends on your personal preference. I like to add about 1/4 cup.

I don't know about you, but egg salad recipe is on my mind tonight. After a busy day at work and then a long (but excellent) work-out at the gym, I am naturally seeing for something relatively easy, uncomplicated and quick.

Egg salad is versatile because it can act as a side dish at breakfast or supper. You can put it in the middle of two slices of bread to make a sandwich as well. an additional one added bonus is that it doesn't need complex ingredients.

So how do you make egg salad? Here are some easy instructions.

First secure or make sure you have these ingredients (there is only 3 main ones so it might mean a quick stop at the grocery store on your way home):

6 eggs,
1 stalk of celery,
3/4 cup of mayonnaise or Miracle Whip (adjust this whole to your liking).

First, make some hard boiled eggs. It can be tricky but here's how I do it (you can result your own formula if that works best for you). Fill a pot with water up to 3/4 full, then add the eggs to the pot (Note: the eggs have to be fully submerged). Turn up the heat to high setting, then cover the pot. Remove the pot from heat of the stove as soon as boiling temperature is reached while retention the lid on and allow the eggs to cook for about 10 minutes to secure hard-boiled eggs.

In the meantime, finely chop the celery. After the 10 minutes are up, dump the water from the pot into the sink and shock the eggs in cold water. Peel and chop the eggs. In a large bowl, mix chopped eggs and celery with the mayonnaise or Miracle Whip.

That's it. Enjoy it as a side dish or if you just want something quick and simple, put it in the middle of two slices of toasted bread and taste with some salt and pepper. Happy cooking!

In the United States, only Albacore can legally be sold in canned form as "white meat tuna"; in other countries, yellowfin is also acceptable. While in the early 1980s canned tuna in Australia was most likely Southern bluefin, as of 2003 it was ordinarily yellowfin, skipjack, or tongol.

Canned tuna is cheap and wholesome as well, consisting of lot of acids, proteins, minerals and vitamins. You can make easy meal from it, what tastes extra good with fresh salad.

Ingredients You'll Need:

12 sheets of lasagna
1 dl of mozzarella cheese

Tuna fish sauce:
2 onions
4 cloves of garlic
2 tablespoons of oil
800 g of crushed tomatoes
200 g of canned tuna
2 dl of sliced green olives
1/2 tablespoons of salt
1 tablespoon of oregano
2 teaspoons of thyme

Cheese sauce:
2 dl of ricotta cheese
2 dl of sliced mozzarella cheese
3/4 teaspoons of salt
1/2 teaspoons of black pepper

About 20 minutes for preparing + 30 minutes for cooking.

First preheat the oven to 200 degrees. Chop the onion and cloves of garlic. Cook them with oil until soft. Add tomatoes, tuna, slices of olives and spices. Boil on medium heat for about 10 minutes. First pour tuna sauce to the bottom of the baking dish and then cover with lasagna sheets. Sprinkle with mozzarella and ricotta cheese. Repeat the layers. Cook for about 30 minutes. Remove from oven and let it rest under folio for other 10 minutes.

Cooking takes too much time. It's possibly the most common excuse used to avoid eating healthy. Why bother taking an extra hour for every meal, when Carl's Jr. Is just nearby the corner?

The truth of the matter is eating healthy can be accomplished in under two minutes with a dinky weekly prep work. Enter the salad.

Simple Salad Recipes

The idea of this salad is simple and literally squeezes into the program of the 9 to 5 worker. Set aside an hour on Saturday or Sunday to prepare some cups of the following ingredients:

Salad Ingredients

some cups salad greens Snow peas cherry tomatoes red Holland bell peppers broccoflower cucumber pine nuts avocado grilled chicken.

Most of the ingredients (peas, tomatoes, broccoflower, cucumber, and bell peppers) can naturally be chopped and stored in Tupperware containers. To prepare the avocado, half the fruit, make some lateral into the pulp with a pairing knife, and naturally scoop across the inside edge of the skin. The pine nuts will add a stronger flavor if roasted. Spread the nuts across a cookie sheet and bake at low heat (~250 degrees) for about 5 minutes. For the chicken, I advise breast meat, grilled lightly in olive oil. All ingredients can be stored in Tupperware and should stay fresh for the rest of the week (though I would advise tossing any unused ingredients after 10 days).

Actually manufacture the salad is the easy part. Pop your lids, use your hands, and scoop desired amount of ingredients into your lunch bowl, it takes almost no time. If you're headed to work, keep a detach thermos for your salad dressing and add the salad dressing right before eating. Speaking of which, here's the dressing recipe:

Balsamic Vinaigrette

0.75 cup extra virgin olive oil 0.75 cup balsamic vinegar 2 tsp Dijon mustard 1 clove garlic, pressed or crushed 0.5 tsp oregano Dash of salt and pepper

This recipe couldn't be simpler. Toss all the ingredients in a jar, shake thoroughly, and refrigerate. On the quick and easy side, it doesn't get quicker or easier than that. A mason jar works well for mixing, but even a simple Tupperware container will suffice. The oil and vinegar will finally separate, so be sure to give the dressing an extra shake before pouring over the salad.
