Clementines are the small citrus in boxes or mesh bags that appear in markets during the winter months. This year's crop is tasty, juicy and plentiful (prices are low!).

They're great for snacking, sweetmeat or in fruit salads. Clementines also make a fabulous increasing to practically any green salad, or in hearty salads with whole grains and beans. I've included five of Diana's recipes below to get you started.

Simple Salad Recipes

In Canada and perhaps elsewhere clementines may be called mandarins. Technically clementines are a cross between mandarins (Citrus reticulata) and Seville oranges (Citrus auratium). The recipes can be made with any of the tangerine-sized citrus or with oranges sections cut into bite-size pieces.

To get ready clementines for salads, just peel and section. If they are large or you want more flavor from the juice in your salad, cut the peeled fruit in half cross-wise before you isolate the sections.

Look for boxes of small, firm fruit. I find that the smaller clementines often have the best flavor, although they may be more difficult to peel. If you get a box with poor flavor, look for an additional one "brand" (from the box labels) and try again. They come from Spain, Morocco, South America and varied other countries; I haven't found any trustworthy way to tell which will taste best. If you can find the ones from California (usually labelled "California Cuties", in mesh bags), they seem to be consistently good.

Orange or lemon peels can be grated ("zest") for flavoring, but Do Not try to use clementine peels this way -- they are very bitter.

Editorial note: Just a few years ago no one had heard of clementines; now they're in any place and they sell like hotcakes. I hope that food marketers will take note that Shoppers Will Buy restorative foods if they are tasty, attractively packaged and reasonably priced. Vote with your pocketbook; buy lots and enjoy!

Spinach Salad with Clementines

6 cups baby spinach leaves

12 clementines, sectioned

1/2 cup walnut or pecan pieces

1 bunch green onions, sliced crosswise (optional)

1/2 cup sliced water chestnuts (optional)

For the dressing:

3 tablespoons olive oil

Juice of two limes or lemons (about 1/4 cup)

1 tablespoon Dijon mustard (optional)

Place the salad ingredients in a bowl. Stir the dressing ingredients together and toss with the salad.

4-6 servings

Clementine-Wild Rice Salad

12 clementines, peeled and sectioned

1 6-ounce can sliced water chestnuts, drained

2 bunches green onions, sliced thin

2 cups cooked wild rice, chilled

1 cup mint leaves (optional)

1 cup cilantro or Italian parsley leaves (optional)

1/4 cup rice vinegar

juice of 1 lime

1/2 cup fat-free mayonnaise (optional)

3 cups shredded Chinese cabbage, chopped romaine lettuce or baby spinach leaves (or a combination)

Combine all ingredients except the greens and mix thoroughly. Toss with the greens and serve.

6-8 servings

Note: To make ahead, merge all but the greens and chill. Toss in the greens at the last minute.

Clementine-Black Bean Salad

2 cups cooked barley or other whole grain of your choice, chilled

1 16-ounce can black beans, drained and rinsed

1 green pepper, chopped

1 bunch green onions, chopped

12 clementines, peeled and sectioned

1/4 cup honey-mustard salad dressing

Butterhead or other lettuce leaves (optional)

Combine all ingredients except the lettuce and chill. Serve on a bed of lettuce leaves if desired.

4-6 servings

Fennel Salad with Clementines

1 large or 3 small fennel bulbs

10 clementines

1/4 cup lemon juice

2 tablespoons fennel seeds

1 teaspoon ground cumin

1 clove garlic, minced

pinch cayenne, or to taste

1/2 teaspoon salt, or to taste

Freshly ground black pepper to taste

Trim the fennel bulbs, discarding the base and stems. Cut the bulb in quarters lengthwise and then slice crosswise into 1/4"slices.

Peel the clementines, cut them in half crosswise and isolate them into sections. Mix all but 1/2 cup of the clementine sections with the fennel in a serving bowl.

Crush the remaining 1/2 cup of the clementine sections with the back of a spoon. Add the lemon juice and seasonings. merge with the fennel and clementines and chill for at least 1 hour to blend the flavors.

4-6 servings

2 cups cooked quinoa, chilled

2 tablespoons balsamic vinegar

1 tablespoon Dijon mustard

1 jalapeno pepper, seeded and chopped

8 black olives, sliced

1 small red onion, chopped

1 cup chopped celery

1 red or green bell pepper, chopped

12 clementines, sectioned

12 cherry tomatoes, halved or quartered

Fat-free honey dijon mustard dressing, to taste (optional)

Combine all ingredients and chill until ready to serve. If the salad seems too dry, moisten with a microscopic white wine or Italian salad dressing.

In a separate bowl, whisk together the sugar, white wine vinegar, vegetable oil, cider vinegar, poppy seeds, onion, paprika, and sesame seeds. Just before serving, toss the spinach in the dressing mixture.

1 1/2 cups fresh broccoli florets
3 tbsp mayonnaise
4 bacon strips, cooked and chopped
3/4 cup shredded cheddar cheese

1 bag Italian salad greens
1/2 cup shredded mozzarella cheese
1/2 cup pecan halves
1 pear (peeled, cored and diced)
1/3 cup Italian salad dressing

In addition to the basic dough you will need:

1/4 cup unsweetened cocoa powder

3 large eggs

1 1/2 cups granulated sugar

1 teaspoon almond extract

1/2 teaspoon baking powder

3 cups flaked coconut

1/2 cup maraschino cherries, well drained and coarsely chopped

Line a 13"x9" baking pan with foil.

Stir cocoa powder into basic dough mixture. Press evenly into the prepared pan. Bake for 10-15 minutes or until the crust looks dry.

In a medium bowl whisk together eggs, sugar, almond extract and baking powder until well blended. Stir in coconut and cherries. Pour over the baked crust.

Bake for 30-35 minutes, until top just begins to brown and a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack. Lift it out on to a cutting board using the foil ends and cut into 1 1/2" squares. Squares can be stored in an airtight holder for up to 3 weeks.

Coconut Pineapple Cookies

(Makes about 36)

In addition to the basic dough you will need:

1 1/2 cups sweetened flaked coconut

1/3 cup pineapple preserves (use raspberry or apricot if you prefer)

Add 1 cup of the flaked coconut to the basic dough compound and mix well. Shape the dough into 1 1/2" balls and roll in the remaining coconut to coat them. Place the balls 1" apart on lightly greased cookie sheets. Make a deep indentation in the center of each cookie with your fingertip.

Bake for 12-15 minutes until the cookie is firm and the coconut is lightly toasted. When cooled, fill each hole in the center of the cookies with the preserves.

You can vary this basic dough to make a wide range of Christmas cookie recipes. Add other flavorings like maple, ginger or cinnamon. Add chopped dried fruits like apricots or dates. Or bake them plain in holiday shapes and decorate with colored icing.

Pour oil composition over top of ingredients in bowl and mix well. Add toasted noodles, almonds and sesame seeds. Mix again. Ready to serve.

Combine oils. Add remaining ingredients and mix well.

Balsamic Vinaigrette

1/2 cup olive oil
1 tsp. Sugar
1/2 cup balsamic vinegar
1 garlic clove, minced
Salt and pepper

Blend ingredients, mixing well.

Ranch Dressing

2 tsp. Onion, minced
1/8 tsp. Garlic powder
1 tbsp. Dried parsley
1 cup mayonnaise
1 cup buttermilk

In a medium-sized bowl, mix together mayonnaise and buttermilk. Stir in remaining ingredients.

Cucumber Dressing

3 medium cucumbers
2 small onions
1/4 cup sugar
1/4 cup lemon juice
1/4 tsp. Garlic powder
2 tbsp. Worcestershire sauce
1 quart mayonnaise

Process cucumbers and onions in a food processor. Stir in sugar, lemon juice, garlic powder, and Worcestershire sauce. In a medium-sized bowl, integrate cucumber blend and mayonnaise.

Summer Picnics - classic Macaroni and Potato Salad Recipes

When it comes to summer picnics, two of the classic foods that come to mind to me are great tasting macaroni and potato salads. I don't think any summer picnic would be faultless without them.

If you are cooking for a large group, both of these recipes can be in effect doubled. I suggest refrigerating them for at least 6 hours before serving them.

Summer Salad Recipes

To preclude spoilage, don't let them sit out in hot summer heat for more than two hours. If they will be sitting out for long periods of time, sit your serving bowl in a basin of ice or purchase one of those new chilled bowls that are out in the marketplace.

Classic Macaroni Salad Recipe

1 (8 ounce) box elbow macaroni pasta

1/4 cup green pepper, finely chopped

1/2 cup carrots, finely grated

2 tablespoons yellow mustard

4 tablespoons granulated sugar

2 tablespoons white vinegar

2 tablespoons reduced-fat mayonnaise

1 small onion, finely chopped

salt and pepper to taste

1 teaspoon celery seed

In a large sauce pan, cook the elbow macaroni in salted boiling water until done. Drain the water and place macaroni in a colander and run cold tap water over them so that they cool down. In a medium-sized bowl, incorporate the chopped vegetables, mustard, sugar, vinegar and mayonnaise until well combined. Stir in the cooled and drained macaronis, salt and pepper to taste and sprinkle the celery seed on top. Place a seal onto your bowl and refrigerate for 4 hours before serving.

Classic Potato Salad Recipe

6 cups cooked and cubed potatoes

1/4 cup onion, finely chopped

1/2 cup mayonnaise

2 tablespoons parsley

1/2 cup sour cream

1/4 cup sweet pickles, chopped

1 teaspoon yellow or Dijon mustard

6 slices bacon, fried and crumbled into small pieces

salt and pepper to taste

2 teaspoons celery seed

Note: I prefer to use red skinned potatoes as they hold their shape best than white potatoes.

Cook and drain potatoes and set aside. In a large bowl, incorporate all of the above ingredients together until the sauce is plane and creamy. Gently stir in the cubed potatoes until all ingredients are combined. Seal your bowl and place into the refrigerator for 4-6 hours before serving.
